Popular Hamilton spot for fried chicken sandwiches makes a comeback

If you know, you know: Hamilton’s dearly departed comfort food spot in Mount Hope – The Pigeon – made some of the city’s best fried chicken sandwiches before the family-owned takeout restaurant closed its doors in 2021. 

Now, locals who have been missing Chef Matt Beasley’s tasty handhelds will be able to get their fix once again as The Pigeon returns in a pop-up format under a new name. 

Cozy Bird has launched and begun selling fried chicken sandwiches, popcorn chicken, fries, and homemade dips for pick up from Born & Raised at 224 James Street North. 

Locals simply need to go to cozybird.ca to preorder their food, which will be available for pickup on select days of the week. The current pickup dates are Mondays and Tuesdays. 

Some of the fried chicken sandwich creations on offer include the Original with buttermilk ranch, pickles, and iceberg lettuce; the Mack with Russian dressing, cheese, pickles, onions, and iceberg lettuce; and the BBQ Bacon Cheddar with barbecue sauce, cheddar cheese, bacon, iceberg lettuce, and chipotle mayo. 

When Matt Beasley and Jenny Ngu first launched The Pigeon in a tiny shop by the Hamilton International Airport in 2018, they quickly gained a reputation for their standout comfort foods and had Hamiltonians making the drive out to Mount Hope to get a taste.
